Smoked Chicken Seminar

In this seminar Dr. Knight will demonstrate how to prepare whole chickens to make delicious smoked barbeque chicken using a charcoal smoker. This technique can also be performed on kettle grills, propane grills, and other styles of smokers. We will prepare whole chickens and chicken quarters from poultry raised at the University of Maine’s J. In 2016, the College of Education and Human Development solicited proposals from faculty members for funding of up to $40,000 for one-year research projects. This call for proposals emphasized potential for future scholarship and broad collaboration with other faculty at UMaine and beyond, as well as staff and students.
