This week’s Fermentation Friday is all about Koji! Rich Shih, author of “Koji Academy” (Rediscovering the Magic of Mold-Based Fermentation), will be joining us to talk about everything Koji! As always there will be hands-on experiences working with different fermented materials, things to taste and things to take home!
*Please bring some sort of glass jar with a lid, and a reusable container with you to each session – it’s more likely than not that you’ll be bringing home something to keep on fermenting!
For more information or to request a reasonable accommodation please email Ellie Markovitch (ellie.markovitch@maine.edu) or Jessy Brainerd (jessica.brainerd@maine.edu).
This series is free and open to the UMaine community and has been made possible with support from the Clement and Linda McGillicuddy Humanities Center, the Cultural Affairs and Distinguished Lecture Series.
